Combine browned butter, white sugar, brown sugar, and vanilla in a large bowl. Mix well with a wooden spoon. Stir the egg and egg yolk for 30 seconds after each addition. Stir the batter rapidly for 30 seconds after it has rested for about 5 minutes. The texture and color of the batter should lighten.

  1. All-Purpose Flour - 1 ¾  cups
  2. Unsalted Butter - 10tbsp
  3. Light Brown Sugar ¼ cup
  4. White Sugar ¾  cup
  5. Egg - 1 large
  6. Egg Yolk -1
  7. Vanilla Extract -1 tbsp
  8. Baking Soda -½ tbsp
  9. Salt - ½  tbsp (sea salt)
  10. Chocolate chips alternative (Cocoa Powder) - ¾ tbsp ( or as you like)


  1. First, stir the butter.
  2. A nutty aroma will emanate from the butter as it foams and turns golden brown.
  3. Make sure the butter is only lightly browned.
  4. Allow butter to cool after it has been removed from the heat.
  5. Mix cooled brown butter with brown sugar and white sugar. Mix until well combined. Pour in the egg, egg yolk, and vanilla extract. Combine well.
  6. Combine the flour, salt, cocoa powder, and baking soda separately.
  7. Combine half of the dry ingredients with half of the wet ingredients.
  8. A little bit at a time, add the remaining flour, stopping if the dough becomes too dry.
